Decadent Double Chocolate Chip Cookies



Today is my Hubby and I's 4 year wedding anniversary! I cannot believe we are already 4 years married. I was thinking about everything we have been through in our 4 years of marriage.


~ bought a new house, Adopted a crazy busy puppy (beagle named winston), left my job to be a Stay at home mama to 2 beautiful girls they are 9 months old and 3. if that is not alot in 4 years I dont know what is? Anyways I know I may complain about the small things in life sometimes but when I hit milestones like an anniversary I reflect a little and realize how grateful I am to have the life I have. So to celebrate today I wasnt in the mood for cake. cookies are good enough treats for us. My hubby loves anything to do with chocolate chocolate chocolate..My kind of man. I was in the mood for something very decadent. So here it is. Happy Anniversary Love...I love you very much. muah***xox








Ingredients:
1 cup (250 mL) butter, softened
3/4 cup (175 mL) packed brown sugar
1/2 cup (125 mL) granulated sugar
1 egg
1 teaspoon (5 mL) vanilla
1 2/3 cups (400 mL) all-purpose flour
1/3 cup (75 mL) cocoa
1 teaspoon (5 mL) baking soda
1/2 teaspoon (2 mL) salt
1 package (250 g) CHIPITS® Special Dark Chocolate Chips
1 1/4 cups (300 mL) coarsely chopped pecans


Directions:




1. Heat oven to 375°F (190°C).2. In large bowl, beat butter, brown sugar and granulated sugar until fluffy. Beat in egg and vanilla until creamy.3. In medium bowl, mix together flour, cocoa, baking soda and salt. Add to butter mixture, beating until blended. Stir in premium dark chocolate chips and pecans.4. Drop dough by tablespoonfuls (15 mL) onto greased cookie sheets. Bake 8 to 10 minutes or until set. Let cool for 5 minutes on sheets, then transfer to rack and cool completely. Makes about 4 dozen cookies.TIP: Use your favourite nut -- walnuts, almonds and hazelnuts all taste great.

Tiered Wedding Cake Favors




This was a order made for a customer who is getting Married on July 10th, 2010.

Butter Cookies decorated with Royal Lemon Icing. These will be used as their Favors for their guest. 50 + cookies later and we have "A lot" of wedding cakes.

It is really hard to see in the picture....but each cookie is detailed & hand painted on with Silver Pearl Dust.

Cookies

Any Ideas what this is going to say??.......unscramble if you please....
oh, and there are a few extra letters to mess you up. My family will get this right away.

yes these are her tiny toes....so cute eh? But you cant eat them!



I just realized that already my daughter will be 5 months old this Saturday. Wow where did the time go? I thought Id make some cookies in honor of her..(too bad she cant eat them yet...but WE can! )

So something horrible happened....the letter "O" was smushed! .....
So sad. it did look pretty. lets all pretend that it never happened...better yet...just dont even look at the letter "O"....
Looks like now her name is "Livia"...


Just some simple cookies. These cookies are made of Vanilla sugar cookies..and iced with royal icing (the brown icing is made of Chocolate royal icing).. I got the color scheme idea from my daughters baby blanket. pink with brown polka dots. Since she cannot eat these..just yet..she can be comforted by her blankey and we can be comforted by indulging in these cookies.

Choco-Mint dipped cookies


1 1/2 cup mint-chocolate chips
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter -- softened
1/2 cup brown sugar -- firmly packed
1/4 cup sugar -- granulated
1/2 teaspoon vanilla extract
1 egg

Directions:
Preheat oven to 375F degrees. Melt 3/4 cup of the mint-chocolate chips in a the microwave , stir until smooth. Remove from heat; cool to room temperature.
In a small bowl, combine flour, baking soda and salt; set aside.
In a large bowl, combine butter, brown sugar, sugar, and vanilla extract; beat until creamy.
Add melted chips and egg; beat well. Gradually blend in the flour mixture. Stir in remaining 3/4 cup of mint-chocolate chips. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
Bake at 375Fdegrees for 8 to 10 minutes.

Allow to stand 2 to 3 minutes; remove from cookie sheets. Cool completely on wire racks.


After they are done baking, I used chocolate candy wafers and melted them in the microwave for about 30 seconds.

When the chocolate is melted, dip half of the cookie into the chocolate and cover the area well. dont forget to double dip. Then right after when the chocolate is still wet sprinkle colorful sprinkles to decorate. use whatever candy you like.


My daughter had lots of fun with these cookies. A really fun recipe to do with the kids.




I love white Chocolate....my weakness. the mix of the white chocolate and the Mint is so good. especially when warm. I think I sent half the batch to work with my husband so I wouldnt eat them. Crazy good cookie!!!

S'mores Cookies

Danger, Danger!! Bad Ashley!!......I couldnt help myself. I got to stop baking dangerously good things like this. I found this recipe today and I didnt plan on making them for a while. But the recipe kept calling my name all night long. So..eight o'clock on a Tuesday night I gave in to my Sugar addiction. They turned out so good. Campfire cookies cooked right in my kitcken.
Marshmallow & Chocolate & Graham crackers.
"Yummy"....




*1 cup, 250 mL All-Vegetable Shortening

*1 cup, 250 mL sugar

* 1 egg

*1 tsp, 5 mLvanilla

*2 cups, 500 mL All Purpose Flour

*1/2 cup, 125 mL graham cracker crumbs

*1 tsp, 5 mL baking powder

*1/4 tsp, 1 mL salt

*1 cup, 250 mL miniature marshmallow

*8 oz milk chocolate, chopped









Preparation Preheat oven to 350F (180C). Line a large baking sheet with parchment paper.





Cream shortening and sugar until light and fluffy. Beat in egg then vanilla. In separate bowl, mix together flour, graham cracker crumbs, baking powder and salt. Stir in marshmallows and chocolate. Stir flour mixture into creamed mixture. Gently press into 1 ½" balls (4 cm); place 2" (5-cm) apart on prepared baking sheet.


Bake in centre of oven for 12 minutes or until golden. Let cool 5 minutes, then transfer to cooling racks.
